Harvesting, transport and grinding of the olives.

The olive is harvested exclusively in the air (meaning, the olive is still on the tree, never on the ground) in the optimum moment of ripening. The system of harvesting consists in vibrating the olive tree, using special machines. The olives are loaded in trailers and transported to the oil mill.

The olive is ground within 24h of harvesting, so that it does not lose any of its properties. On reaching the oil mill they are washed, weighed and ground immediately. This consists in grinding the olive to break it and release its liquids.

The resulting paste is beaten at a temperature no higher than 27ºC, so lessening the viscosity of the mass making easier the extraction of the oil.

The result is a very high quality extra virgin olive oil.

OXIDATION PROCESS:

Virgin olive oil combats the exit of cellular oxidation, contributing to the prevention of many illnesses, including premature old age. It improves the lipid profile in patients with diabetes. Lowering the blood sugar levels.

CHILDREN AND SENIOR CITIZENS:

Virgin olive oil possesses a chemical composition which is similar to the fats in human milk making it very recommendable for child nutrition. It improves growth and the metabolism of the child.

It is rich in vitamin E which, due to its antioxidant effect on the cellular membrane, makes it ideal for the senior citizen.

DIGESTIVE SYSTEM:

It lessens the secretion of gastric acid, improves the intestinal absorption of diverse nutrients helping to activate the pancreas.

Agro environmental benefits

It uses organic fertilizers and minimum tillage, very advisable for the improvement of the fauna and flora of the soil. It avoids corrosion of the soil enriching it naturally, without using chemical products or pesticides. With this type of agricultural practices, the underground water is never polluted, as the fertilizers used are composts, animal manure, green manure, etc. All of which contribute to the conservation of the environment.

Nutritious Benefits

It is a safe, natural, authentic and healthy product. Organic extra virgin olive oil is the tastiest, its nutritious properties are maintained intact. Apart from the official controls carried out on all foods, organic products are subjected to an additional certification (in our case CAAE), which guarantees the authenticity of its organic origin. In this type of product the traceability and authenticity are assured. Organic olive oil have much higher production costs than conventional olive oil, due to it being an intensive agriculture, using only natural products which are more expensive and the yield per hectare is usually lower, but it above mentioned benefits and delicious flavor more than compensate the difference in price.

For many years the JIMÉNEZ DÍAZ family has been elaborating artisanal Extra Virgin Olive Oil of 100% organic production. Our cultivation has been developed by generation after generation in particularly suited rich soils to maintain our centenary olive groves in the best condition in the most ideal areas for growing of olives in the mountains of Toledo “Los Montes de Toledo”.

Due to our long experience we have managed to produce a unique 100% natural olive oil.
